Hi Guys,

Went out collect crab at the weekend. I Usually buy but said id give it ago. So got a large amount of crab in different stages of peeling so 15 or so are already frozen I was sure of them and happy they where in the rite stage.

My question when bringing crab on how do you know exactly when is the optimum point to use. I have split into two trays at the moment. Ones who are slightly lifting at the back and another tray which have a larger crack at the back and a small hairline crack around the carapace at the sides.

When would the be best to freeze and for the crab with only the small crack with would be very difficult to peel how long would you expect them to take before reaching a usable point.

When there back is starting to lift off that's when I freeze them. It's very easy to peal there shell off.
