Ray for dinner..

#1 Post by steverbyrne »

Ive never caught a ray but was wondering do people bring them home for dinner...
I heard someone say that the blood is poisonous so the fish has to be gutted properly....is this true..

ray wings can be eaten but have a strong smell of ammonia.some people eat them but I think its nicer to see them swim off after a quick photo

Have to agree with gfkelly1969,rays are such aprehistoric creature from ancient times and to kill one is sinful especially when you consider how beautiful a rays wings look when they are in a full swim motion, let them go and enjoy the feel good factor, its not as if a person would starve to death, although with the price of things, maybe its a possibility.

The chippers in dublin all used to sell ray 'in season' when I was younger. I remember it was more expenseive than cod or haddock. Haven't seen it on the board in a long time.

mate put the rays back ,its far better to see them swim off and know they are there for another day.there are lots of other fish in the sea that are better tasting than ray!!!and think of the the conservation aspect of the thing if its a female she will bread and produce other little rays!!!!

ray wing is nice done right..

i've heard many different ways to prepare them, but the one that worked for me was to cut off the wings and hang them (let them bleed out) as fresh as you can.
a few hours is long enough, then skin the wing and shallow fry with a coating of flour in butter... yummie

**WARNING**
do not discard the carcass back into the water or you wont see ray in that area for a long time to come. (over 7yrs in a mark i fished, and no it wasn't me that dumped the carcass, but i know who did  )

Mc Donaghs fish and chip emporium in Galway do ray wing.. yummie too  :D

I've heard that it's not good to eat them when too fresh, you cut the wings off and freeze them for a week or so and it drives the ammonia off, then they're good to eat. The other way I've heard is to put them in a light brine overnight in the fridge then rinse them well before battering and frying. Would also be good baked in the oven.
Here's a video that shows how to fillet the ray properly.
