does anybody have an oven based recipe for ray. i don't want to fry it i'm going for the healthy option.

Make a foil parcel and put a knob of butter in then the ray ,now pour in a drop of white wine and a little salt and pepper,i like to put half a clove of garlic in as well ,now seal the parcel and put into a hot oven 180 for 12 to 15 mins.this works for most fish,get some crusty bread to mop up the juice

that's a fair point j1, but the olive oil can be a little over powering and i don't want to mask the flavour of the fish.

ray are pretty strong flavoured so no worry of over powering them with olive. absolutley delicious by the way
