Fish Filleting Videos

I've never really had a problem filleting round fish, but I've never quite managed to get my technique right for flatties, until I saw the excellent video on this page which shows you how to do it correctly. There's also a video on how to do round fish as well.

Good videos, but that man is dangerous with a knife hasn't a clue how to handle it. Always cut away from your body where possible and keep your hands away from the blades trajectory if it slips.
It sounds like common sense but that video of the flatfish filleting bothers me in places.

Yes, I watched it again and I'd have to agree with you. Although to be fair to the guy, he did state in the intro that he was trying to keep his hands out of the way of the camera, so I think we should give him the benefit of the doubt.

one of these days i'm going to have to do a video showing how to do it right..

anyone who has seen me do it know i might take my time.. but there isn't a singe bone to be found ans there's extremely little waste..

The bloke in question is a very experienced angler and journalist, Alan Charlton.

As phanover says he is trying to keep it clear for the camera.

You'll have to use the kind of camera they have on wildlife programs to catch hummingbirds in mid-flight. :)
