Mack - All year round
Lug - All year round
Crab - not sure but i think its traditionaly a summer bait
Rag - all year round
Sandeel - depends on how you fish them but i mostly use them in the summer.
Razorfish - i find works best in the autum after a good storm
Squid - all year round
Mostly you can use all bait all year round and it will usually work. its just that some baits will be harder to come by in the winter months so they aren't used as much.

big question Dan!!! fish will often take all types of bait at some stage. consider venue, time of year and species as mentioned and hedge your bets!

choice of bait depends on venue and target species. most bait will catch at various times of year. some bait works better fresh than frozen also.
some examples (at least down waterford area):
mack - fresh in summer, frozen in winter - ray, dogs, etc etc
blueys - frozen - dogs, ray, etc
lug - flatties, bass, cod, etc
gutted black lug - flatties, bass, coalies, cod etc
crab - live when available, frozen otherwise - excellent cod and bass bait, small hardbacks for wrasse
razor - usually frozen - excellent for bass, also ok for dogs etc
rag - good for flatfish, also works for bass etc
sandeel, launce - excellent livebait for bass and pollock, good frozen bait for dogs, rays, etc
shellfish - prawn, mussel etc - good for a variety of species e.g coalies, codling
maddies - very good for flatties
squid - usually frozen - works for cod, used for ray in some places etc
? sure i left out some ?
then you get into cocktails of baits. Lug & Razor is good for bass. Lug tipped with fishbaits for flatties, coalies etc. The list is almost endles really. You have to try all sorts of things and see what works for different species at the marks you fish. Talk to a good local angler/match angler and it will save you lots of time.
