http://en.wikipedia.org/wiki/Rock_salmonBut i agree, dogfish is nice to eat if cooked right, keep it in the milk for an hour and then fry as you do with any other species. yeah dodgy to get the skin off but only girls cant do that

Its all about the way you cook fish.

A nice big piece of ling, baked in the oven with some cherry tomatoes & black pepper. Unfortunately i don't do enough boat fishing to catch enough of these but it is the fillet steak of the sea.
Dabs are also terrific, fresher the better. Had some crackers the last few years around xmas time from the waterford estuary.

Generaly if you call spurdog, huss, smoothie or even dogfish as Rock salmon you wouldn't go to wrong, I was boat fishing in Westport years ago and a local skipper called a doggie as rock salmon, becouse they been served in local restaurant by that name
And there is no much of differens between them, just a shape.
they are least toxic compare to other spesies of sharks that's why still good to eat

I was walking down the steps of a local pier, about to release a doggy I had caught, when a guy came running up to me asking if he could have it. I asked him if he was going to eat it. He said he was so I gave the fish to him. When I was packing up my gear later, he offered me 5 euro for it, I didn't take the money but told him I'd get a couple of Macks off him another night ! Two or three days later, the same guy came up to me with a little plastic bag full of brownish cubes which turned out to be the same doggy, smoked and flavoured. I tried some and I have to say that hot smoked dogfish is quite tasty indeed

bass is an amazing fish to eat. wrap whole fish in foil with some sliced onion and garlic with a drop of white wine. when its ready thicken the juices with a drop of cream and a little flour, delicious with mash and roasted tomatoes. i find it a not very fishey tasting fish so people not too keen on fish love it too.

Forget all the hassle of skinning - just pour hot water over them or hold by the tail under a hot tap for a minute . Then use the back of a knife to scrape off the skin . It will have disintegrated into something like a thick paste .

i like bass due to the chunky flakes. Hard to beat monkfish though for taste and texture.
