Hi Mike
Any of the main beaches from Camp west can produce rays including stingers - and yes they can get fairly big. If you specifically want to target stingers, I am told that king ragworm is the only bait to use in that it will pick them out of the others.. painted or small eyed and thornies are the main catches but I believe the odd undulate also shows up there...
I have just written a piece for the Irish Angler on Castlegregory (due out in April ) but you could try Fermoyle, Camp, the Back Strand... etc.
I would imagine big col and others could offer more detailed information.
If I recall there was even a post about thornies invading Dingle harbour!

As Kieran points out Camp is the spot for the Stingers and Undulates.
If you want a few easy Thornies I would recommned all the main beaches after dark but particulary red beach as we call it. This beach is directly opposite Brandon Pier and always produces a thornie at the bottom of the tide for the first two hours or so of the flood, Sandeels on a simple below the lead trace as far as you can cast.
