a few novice questions! very novice!

ok ive been fishing a few years but obviously not regular once every few months when i get the time so ive a few questions if anyone can help me out with.
probably my biggest problem is baiting the hook! i prefer lugs and sandeels as personally ive had most success with them but when it comes to crab i just cant seem to hook em or make it look tidy on a hook when i tie it has anyone any tips or even a pic of how a good baited hook with crab should look and a way that makes it stay on the hook! ?
another curious question, i like to try different baits but one surprise i had was sprat! i bought a pack frozen more so cos my cousin said theyre for fresh water fishing mostly so joking turned into a challenge and we actually had a bit of success on it catching 2 or 3 beared rocklings and lost a nice size pollock with em, does anyoen actually use sprat for sea fishing with regular results (regular might be a bad choice of word with fishing but i think you know what i mean!)
and thirdly on an outing in donegal we went after some ray, and caught a good variety of flat fish we counted probably 10 dif varieties based on them been different look wise, but hadnt a clue what was what , is there a good flat fish guide with decent pictures that i might be able to pic up anywhere?
