Prawns: a classic is cooking them shell on, serve with a dipping bowl of melted butter, garlic and parsley.
Black sole: How lucky are you, one of the very very best you can eat, loads of fantastic recipes. Two of my faves are sole meuniere (google it) and sole with a champagne sauce:
http://www.rte.ie/lifestyle/food/recipe ... egetables/Cod: can't beat the classic beer batter with chips. Great for fishcakes, chowders anything! If you have loads why not maae salt cod (Hugh FW has a great recipe for it) or hot smoke it- very easy to make a hot smoker all you need is a tin!
Flounders: Great for goujons. Google Rick Steins recipe.
Ray- love this one. Classic treatment for Ray is with Black Butter (google it). Or treat it exactly like sole meuniere but don't flour it before you fry it.
The River Cottage Fish Book and any Rick Stein seafood book are full of fantastic fish recipes so get cooking no excuse!
