Whilst I dont know the area you want to fish, I'd say float fishing would be a great way to keep the wee one entertained if the conditions allow for it.
Personally I'd go with a float set to around 10-15ft depending on what depth the area is (you ideally want to be fishing about a foot above the kelp/rocks), and with the bullet lead set around 1-2 ft above the hook length. A size 1 to 3/0 hook with rag worm is a good starting point and you may catch a few wrasse with the same set up too. A thin strip of mackerel or sandeel can work well for pollock aswell, as it replicates the small bait fish they are targetting.
Fishing the float should limit tackle loss, and provides a much more visual form of fishing.
