I tried a lot of different tactics when I was out there, most of the fishing is done with the float and you will catch bream, derbio's etc which is great craic. I used prawn(gamba) calamari squid and BREAD(which took my biggest bream).
A lot of the locals fished the bottom and got some nice bream and various other rock fish and tropical type fish. I did this also and had a good bit of success and lost 2 huge fish, snapping my line(4lb braid). I wold suggest bringing light tackle and getting some sport out of it, however bring a spare spool loaded with heavier stuff if you want to fish tight to the bottom (snags, however the chance of a nice fish).
The mullet fishing off the rocks is awesome and kept me entertained for hours, my best was a golden gray to just over a pound and a half.
