What you're asking for here is exactly what I've been looking for (with the great help of this site), and with success on many occasions, for the last few years since I came back to sea angling.....

to give you a chance of catching something in the Cork area is in here.
For example I'm guessing that your simplest chance of catching something in wintertime might be to bait fish with simple rigs off the bridge in Kinsale, off some of the quays in Cobh, or Youghal maybe. But you would probably end up getting lots of small fish, and not the "good fight" you're looking for
If you are very new to fishing you will need to get familiar with some basic methods and species, and build from there. I really recommend a no-nonsense book - Sea Fishing Properly Explained, a paperback available for about 5 quid from a website

Once you get to know the basics you can do searches on this site, as gfk.. says, check for shore marks, then do searches here. Also you can look at the species hunt to see what's available around Ireland.
